Who says you can't pickle in the winter? We just tried this quick winter radish pickle out (mostly because we had them in storage) and to be honest I am pretty surprised as to how much I love them. Winter radish are grown in the fall and store through the winter months. The are larger, meatier and more mellow then their feisty spring cousins. I was surprisingly delighted with this recipe it is fresh, crisp and zingy (not to mention pretty). Quick pickle recipes are great when you don't want to haul out all the canning supplies and they are usually ready to eat within a couple of days.
