Soup Series

From the City:

One of the best things about being a nanny is that I always get to try out new recipes. I discovered this recipe in a Canadian Living magazine in their crockpot edition. It's really really good and must be made in a crockpot to ensure you get that smokey taste. Simon and I have been eating it going on three days....

Crockpot Minestrone

1 jar/can of stewed tomatoes
2 carrots, chopped
2 cloves garlic, minced
1 onion, chopped
1 can chickpeas, rinsed
1 1/2 cups (red or green) cabbage, chopped
1 lb. bacon, cut into chunks
basil (fresh or frozen, whatever you have on hand)
6 cups stock
1 cup whole wheat rotini
sprinkling of parmesan

Directions:

1. In a slow cooker, add tomatoes, carrots, garlic, onion, chickpeas, cabbage, basil, bacon and little salt and pepper.

2. Cover and cook on low for 9 hours.

3. Add rotini. Cover and cook for another 15 minutes. Sprinkle with parmesan cheese and eeeenjoy!!!
